The Potato Concept
The Potato Concept LLC was formed August 14th, 2021 by Lauren Lefebvre and Brandon Rainer on the heels of an inspired cross-country family road trip to California.

With months of planning, we experienced the anticipation of arriving at Wall Drug in South Dacota,(IYKYK) the clay pots and other wonders of Yellowstone National Park, floating in the Great Salt Lake, and of course the cherry on top, Disneyland!


Using the momentum of a successful road trip, we came back to Manchester determined to make another dream come true, being business owners together.

After some research, we found a business food incubator in the neighboring town of Derry, New Hampshire. Creative Chef Kitchens. The owner and founder, Neelima, provided us with the keys to form and begin to grow our business on paper and the resource of a commercial kitchen to hone our skills as emerging food professionals.
We knew in order to grow we would have to put ourselves in front of a crowd. Without a brick and mortar of our own, that meant popping up at craft fairs, breweries, bookstores, aviation museums, old home days, pumpkin regattas, touch a truck events, literally anywhere that would have us.
We would prepare all the food at Creative Chef Kitchens, transport hot and using some basic equipment, serve everything hot and fresh. A skill we still use to this day out of our current location.

Small business helping small business has always been the common thread keeping us going.


It really didn't take long for people to start recognizing there was a story growing with what we were doing, both with the food and who we were as people and as a family.
The first article we had written about us was by Matt Ingersol who was writing for The Hippo at the time. He did a great job capturing us at the infancy of The Potato Concept.
Some of what has ended up at our restaurant (opened in 2023, 119A Hanover Street) was first created at Creative Chef Kitchens and tested out in the field.

FALL is for 'Friendsgiving Potato' this became a big hit at some of the local craft fairs, including the Bow Craft Fair and Goffstown Lyons Club.

WINTER is for Pork Tenderloin with butternut squash. A great friend in the cold months.
​
SPRING brings the return of our Corned Beef specials (our version of a Reubin pictured here) at Great North Aleworks with the musical group the Pop Farmers the Sunday before St Patricks Day!
​
SUMMER is for Pulled Pork Mac and Cheese at the Stadium or at the Derry Homegrown Farmers Market, perhaps?
